Ingredients

  • Tamarind imli 200gm

  • Jaggery 400gm

  • Raisins kishmish 10gm

  • dry Dates 10gm

  • Melon Seeds 10gm

  • Black salt 1 spoon

  • Cumin Powder 1 spoon

  • Fennel seeds (Saunf) 1 spoon

  • Ginger Powder 1/2 spoon

  • Garam Masala- 1/2 spoon

  • Salt 1 spoon

  • Deggi Mirch 2 spoon

  • Red Chilli powder 1/2 spoon

  1. Lets start with this Tamarind Sauce or Imli Ki Chutney Recipe. Firstly Soak Tamarind for 8-10 hours in water. Now after that mash tamarind in that water only with any utensil or it is better to use your hands and just extract its pulp. After you mash it well and extract whole pulp, then filter it and separate the pulp of tamarind. You can repeat this procedure twice so that nothing get waste, and in second time you have to add some water in it.

  2. So after first step we have our tamarind or imli pulp for this imli ki chutney recipe. Break down jaggery (gud) in small pieces. Firstly put tamarind or imli pulp and jaggery in a pan or kadhai. We can also use Sugar instead of Jaggery but I always prefer jaggery. Stir it till jaggery gets melt down.

  3. After jaggery gets melt we will put salt, black salt, cumin seeds powder (jeera powder), garam masala, fennel seed powder (saunf) and ginger powder in it and mix them well. With that put deggi chilli powder and little bit of red chilli powder, deggi mirch or deggi chilli powder adds natural color to sauce. Mix everything well.

  4. Now at this stage of recipe, we will put raisins, dry dates and melon seeds into our tamarind sauce. Boil it for the time till it turn little thick.
    Note if you like more sweetness, you can add more jaggery or sugar to sauce.
